Sukku (சுக்கு) being the Tamil name for dried ginger (Zingiber officinale), one of the most foundational spices of South Indian culinary and Siddha tradition. This is not regular dry ginger powder — it is prepared according to the classical Siddha suddhi (purification) method described in Ramalinga Swamigal’s Nithya Karma Vidhi (1867): the dried ginger is coated with slaked lime (sunnambu), roasted in fire, the outer charred layer removed, and the remaining ginger powdered and stored ready for use. In the Nithya Karma Vidhi, Vallalar gives precise instructions: “Take dried ginger, coat it with slaked lime (sunnambu), and roast it in a fire. Scrape off the outer black char, powder the ginger, and keep it stored. Add a little of this powder to good water and boil it, reducing 5 parts of water down to 2 parts. This is what should be drunk for thirst. If this is not available, at least hot water should be consumed.
